  • 2 tablespoons Light Balsamic Vinaigrette (see recipe)

Your favorite mix of salad vegetables (get creative!):

  • Mushrooms

  • Bell peppers
  • Onion
  • Artichoke hearts
  • Chickpeas
  • Olives
  • Radishes
  • Snow peas

Top the lettuce with the grilled chicken and your favorite combo of vegetables. Dress with vinaigrette.
