- 1 grilled chicken breast, cooled and sliced (approx. 5 to 6 ounces)
- 2 tablespoons Light Balsamic Vinaigrette (see recipe)
Your favorite mix of salad vegetables (get creative!):
- Carrots
- Cucumbers
- Broccoli
- Mushrooms
- Tomatoes
- Bell peppers
- Onion
- Artichoke hearts
- Chickpeas
- Olives
- Radishes
- Snow peas
Top the lettuce with the grilled chicken and your favorite combo of vegetables. Dress with vinaigrette.
