Bison and Turkey Sausage Burger

 

Ingredients

  • 1 lb. Ground Bison
  • 1 link of Fresh Turkey sausage, removed from casing
  • Whole wheat rolls

 

Red Meat Rub Ingredients

  • 1 ½ tablespoons Kosher or course ground salt
  • 2 teaspoons course ground black pepper
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon Chili Powder

 

Directions

  • Mix Bison and Turkey sausage together
  • Mix in all other ingredients
  • Shape bison turkey sausage burgers into patties, flattened
  • Cook on grill or in a grill pan
  • Serve on a Whole Wheat Bun w/desired toppings

Ingredients

White Meat Rub Ingredients

  • 1 ½ tablespoons Kosher or course ground salt
  • 1 teaspoon course ground black pepper
  • 1 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sage

 

Directions

  • Mix ground turkey and turkey sausage together
  • Mix in all other ingredients
  • Shape turkey burgers
  • Cook on grill or in a grill pan
  • Serve on a Whole Wheat Bun w/desired toppings

Dipping sauces/spreads

 

Curry ketchup

  • ¾ cup ketchup
  • Juice of 1 lime
  • ½ teaspoon curry powder

 

Sirracha yogurt

  • 1/2 c. Greek Yogurt
  • 2 Tbsp. Sriracha (or other hot chili paste)
  • Juice of 1 lime (about 2 Tbsp.)

 

Chipotle ketchup

  • ¾ cup ketchup
  • 1 tablespoon pureed chipotle en adobo
  • 1 tablespoon lime juice 
  • 1 tablespoon chopped fresh cilantro

 

Cranberry mustard

  • 1/2 cup Ocean Spray® Jellied Cranberry Sauce
  • 1 tablespoons grainy stone ground mustard
  • 1 tablespoon Dijon
  • 1 tablespoon brown sugar

 

Truffled mustard aioli

  • 1 garlic clove, minced
  • ¼ teaspoon coarse kosher salt
  • 1 cup mayonnaise
  • 2 tablespoons coarse-grained Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Truffle oil
