I love breakfast! This week Chef Ulrich is whipping up a balanced but not bland Breakfast Quesadilla. Sausage, shrimp and peppers – YUM!
Ingredients:
6-8 12 inch tortillas
8 eggs
2 oz milk
1 cup grated GranQueso cheese (or other good melting equivalent)
Salt and pepper
Diced Spanish hard Chorizo sausage
Diced cooked baby shrimp
Diced peppers
Diced onions or scallions
Diced avocado
Chopped parsley, cilantro or chives
Method:
Scramble the eggs in a large non-stick pan with the milk until fluffy. Cover the tortillas with scrambled eggs, chorizo, shrimp, scallions, avocado, cilantro and GranQueso cheese. Place second tortilla to cover the egg and toppings. Melt a little butter in a large skillet. Carefully place the quesadilla in the skillet and cook till golden brown on each side. Alternately you can bake them in an oven until the cheese has melted and filling is warm. Slice and serve immediately.
