In a blender or food processor add the garbanzo beans and process. Combine the olive oil, lemon juice, garlic, ground corriander, pepper, paprika, tahini, cilantro and parsley. Blend well while slowly adding a little water, 1 tablespoon at a time, until the mixture has the consistency of a thick but smooth spread.
Serve immediately or cover with plastic wrap and refrigerate.
Use this dip as a substitute for store bought, highly processed dips and serve with freshly cut vegetables.
